After harvest, grapes are pressed using a traditional basket press, the wine undergoes spontaneous fermentation and ages for 12 months in seasoned barrels. It offers intense aromas of red apple, ripe yellow peach, crushed almond, wild herbs and wet limestone. The palate is richly textured, with a driving citrus acidity and long, chalky salinity.
