Tempo is crafted from 100% Pecorino, grown in the limestone-rich soils of the Val Menocchia. Harvested by hand from the estate’s Vigna San Pietro, only the first-pressing must is used for wine, with parcels fermented separately in cement, stainless steel, and oak barrels before bottle re-fermentation. The cuvée is a blend of different vintages, and a part of each new vintage is held back as reserve wine for future cuvée. Aromas of pink apple, buttery peach, lemon peel and delicate broom flowers lead into a bone-dry, highly textured palate that balances vibrant citrus acidity with a fine perlage and a long, saline finish.
